Edible seeds called chia are Salvia hispanica sage, a herb of the Dead-nettle family, native to the mountain regions of Central America, and is grown for its own seeds.
Hispanic sage is an annual plant over one meter tall, with white or purple flowers.
The plant was already known to the ancient Aztecs and was also used as a means of payment, as mentioned in the 16th century Mendoza Code. The Mexican state of Chiapas got its name thanks to the cultivation of chia seeds.
The seeds are gray to black, about one millimeter long, containing calcium, antioxidants and omega-3 unsaturated fatty acids. They quit the feeling of fatigue, thirst and hunger.
Chia seeds are consumed whole, with yoghurt, as part of vegetable salads, in vegetable juices, in Smoothies or added to pastries. When watered, they create a nourishing jelly that can serve as a substitute for oil and eggs. The body is unable to create essential acids by itself, so it is very important to have sufficient food intake.
Chia seeds are full of fiber, protein and antioxidants. They may also be recommended for diabetes. Chia seeds are easily digestible and can be consumed before and during increased physical activity or sports performance.
Only a few Chia seeds support the proper function of organs such as the lungs, liver, kidneys or gallbladder every day. Chia seeds can boost immunity as they are excellent antioxidants. They can improve wound healing, promote proper heart and blood vessel function. Their anti-inflammatory effect is also known and may reduce LDL cholesterol levels.
A well-known property of chia seeds is their excellent water-binding capacity. 1 part of seeds can increase its volume up to 12x.
Chia seeds have a beneficial effect on blood sugar levels due to the so-called hydrophilic character. The energy from the ingested food is released gradually, the body makes better use of it, and hunger does not so quickly. Seeds should also be consumed in reducing diets and type 1 and type 2 diabetes.
Among others, they contain high levels of phosphorus, manganese, iron, calcium (5 times more than in milk), zinc, potassium cobalt (2 times more than in bananas), sodium, zinc, niacin, folic acid, vitamin A, B17, C and vitamin E .
Thanks to its rapid growth, sage is also used as a decorative plant: the seeds are planted in animal-shaped pots and create so-called chia pets.
